If you are looking for something pumpkin-y to bake, look no further. You guys this bread is out of this world. I have made two loaves in the last two days. It's not too sweet and the pumpkin and banana make it super moist. To me, this screams fall.
Whole Wheat Pumpkin Banana Bread
- 1/2 cup butter {room temp} OR 1/4 cup butter and 1/4 cup coconut oil
- 2/3 cup unrefined whole cane sugar, plus 2 Tbsp for sprkinking on top
- 3 Tbsp honey
- 2 eggs
- 1 cup pumpkin
- 1 cup mashed banana
- 2 Tbsp water
- 1 tsp vanilla
- 1 1/2 cup whole wheat pastry flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 3/4 tsp salt
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 cup diced walnuts or pecans
*please use organic ingredients if possible!*
Preheat oven to 350 degrees.
Beat together butter, sugar, honey, eggs, pumpkin, banana, water, and vanilla.
In a separate bowl mix together flour, baking powder, baking soda, salt, and spices.
With mixer on, slowly add the dry ingredients to the wet until just combined. Turn off mixer and stir in nuts.
Spoon batter into bread loaf pan and sprinkle with sugar. Allow to rest for 15 min.
Bake 60-70 minutes, or until toothpick comes out clean. Cool on a wire rack.
