Brunch is my favorite meal of all. What can I say? Any time I can drink a latte alongside a mimosa, and enjoy eggs benedict, waffles, pancakes, avocado toast, and fresh fruit in one sitting? Sign me up!
This weekend I made my favorite thing to order for brunch, eggs benedict, at home. I mostly followed this recipe, but slightly changed the way I made my hollandaise. This is what I did.
Easy Hollandaise Sauce
3 egg yolks
2 Tbsp lemon juice
1/4 tsp salt
1/4 tsp cayenne pepper
1/2 cup butter, melted
Place egg yolks, lemon juice, salt, and cayenne pepper in a glass measuring cup or bowl. Use an immersion blender to whip up the egg mixture for about 10 seconds. Slowly stream in hot butter while the blender is on for a few seconds, until everything is incorporated. The sauce should be fluffy and light yellow. {If you don't have an immersion blender, a blender will work just fine.}
Done! As Ms. Garten likes to say, how easy is that?
