Recipe: Beautiful Skin Salad


I love to eat as many raw, fresh veggies as I can & this salad is not only healthy, but satisfying too! It's full of great flavor, and makes the perfect lunch for one or two.

Skin Beauty Salad
recipe from Food Matters 

2 handfuls of young arugula
2 handfuls of baby spinach
1 carrot, grated or shredded
2 radishes, sliced paper thin
2 small or 1/2 large cucumber sliced in half lengthwise
1 small red onion, sliced super thin
3 limes, juiced
1 avocado
1 Tbsp raw apple cider vinegar
1 pinch cayenne pepper
1 tsp raw honey
1 handful of fresh soft herbs (I used basil)
1/4 tsp unrefined sea salt

Put the sliced onion in a small bowl with the lime juice to soak for at least 10 minutes {longer is better as it creates an even softer, sweeter, pinker result}

Scoop the seeds out of the cucumber with a spoon and throw the seeds into your blender. Chop the cucumber.

In a large bowl, arrange the leaves, cucumber, carrot, and radish. Take the onion out of the lime juice and add this to the salad too.

Add to the blender {and the cucumber seeds} the leftover lime juice, avocado, vinegar, cayenne, honey, herbs, and salt. Blend until smooth. You may need to add a dash of water if the dressing is too thick. Adjust seasoning to taste.

Dollop dressing generously on your salad, mix thoroughly before eating.
